This hard cheese is a protected specialty. It originates from Kars, a region famous for its alpine high plateaus with over 1500 flower species. The cows that graze there on organic pastures yield a uniquely aromatic milk. ALTINKILIÇ produces this cheese using only this organic milk, natural yeast, and table salt.
Masterfully Matured: 9-12 Months
The true secret is time. This whole wheel matures (ferments) for 9 to 12 months in cold storage. During this time, the cheese develops its intense, strong, and slightly piquant flavor and its firm, noble texture. It is the Turkish equivalent of a great, aged mountain cheese.
