The taste of the Ezine highlands (Organic)

This cheese is a true “terroir” product. It is produced only from March to August. During this period, the sheep and goats feed on the unique flora of the Ezine highlands, rich in wild herbs such as thyme. This organic milk is processed using only natural yeast and table salt.

Traditionally aged for experts

The true secret of this premium white cheese is its long maturation. It rests (ferments) for at least 9 to 12 months in cold storage. During this time, it develops its full-bodied, strong, and slightly piquant character that sets it apart from any cow’s milk cheese.

Serving recommendation

This cheese is the undisputed star of any meze platter and traditional Turkish breakfast (Kahvaltı). It also pairs wonderfully with melon or a glass of raki.
